A man on a 60-day all-potato diet is finding the lack of variety tough, even though his wife made him potato ice cream. Chris Voigt of Washington state said that halfway through his diet, he has had them boiled, baked, steamed, grilled, fried, marinated and mashed and soaked one in pickle juice. The Moses Lake man is executive director of the Washington Potato Commission and is on a mission to prove spuds are not junk food. But he now wishes he had opted for one month rather than two.
