2 tablespoons trans fat-free margarine
4 cups peeled, sliced apples
1/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
4 cups reduced-fat vanilla ice cream (such as Edy's Grand Light
Slow Churned Vanilla Ice Cream)
Melt margarine in a large nonstick skillet over medium heat. Add the apples; sauté, stirring constantly, about 6 to 8 minutes or until apples are almost tender. Stir in sugar, cinnamon and vanilla and cook 1 additional minute or until sugar melts. Serve over ice cream immediately. One serving is about 1/3 cup sautéed apples over 1/2 cup reduced-fat vanilla ice cream.
